Metabolism Basis and Nutritional Regulation for Meat Quality Trait Formation in Non-ruminant Animals
 
  Since 1978 China¡¯s meat production market had a great change from limited accommodation to a saturated condition, also there¡¯s a significant change in animal husbandry. But the solitary goal of ¡°speedy¡± and ¡°quantity¡± in the past few years has brought numerous environmental and social problems, for example, depravation in breeding and feed environment, heavy environment pollution, frequently spread of epidemic diseases in farm animals. Animal products, such as meat has been denied in accessing the international market due to exceeding the standard of drug residue. Toxicosis caused by using prohibited growth promoter, also consumers are now complaining the flavor of meat has gone worse etc. Meat products¡¯ safety and quality is now becoming the focusing point in our country. Meat safety problem generally might be caused by under-developed managing system in animal husbandry industry in our country, but all in all it is due to we failed out of the fact rules of life activity in our past works in animal breeding and feeding. Administration and management rules should be somehow used in meat safety control, while achievements in meat quality improvement depends much more on modern scientific technologies. Formation of meat character and its regulation control is becoming the hotspot in international animal husbandry field, techniques used in improve meat quality will be the main part among these studies, and discovery of nutrient metabolism within meat characterization and regulation is the key to all issues. Formation of meat character in farm animals and birds is a process of interactions between genic, nutritional and environmental factors expressing in metabolism, the signal conduction pathways are the consequence in these series of reactions. Accordingly, the crucial tasks of this project are: £¨1£© Fundamental of transform of nutrients to meat in metabolism in farm animals and birds. £¨2£© Interactions between gene, nutrition and environment and its control, and their effects to meat characters in farm animals and birds. The emphases of this project are nutrient metabolism and regulation mechanisms for formation of meat character in pigs and birds. Therefore, five subjects are brought up based on the first task: £¨1£© The mechanisms of physiological regulation of intake and nutrient absorption. £¨2£© Main nutrients partitioning in organs and tissues and the regulation mechanisms. £¨3£© The main rule in meat character formation and regulation of nutrient metabolism. £¨4£© The development rule and regulation of structure and function of gastrointestinal tract. £¨5£© The effects and mechanisms of maternal effect and nutrition in neonatal period on carcass traits. Gene and environment are two important influencing factors in transformation process of nutrient to meat production. Thus, two subjects are drew up according to the second key and scientific problem: £¨6£© Gene expression and nutrition regulation relevant to meat character; £¨7£© Environment stress influencing signal conduction pathways of meat character. A strong research procession was consisted of the strongest universities and academes in animal nutrition and relevant fields in China for this project. This procession will select the important joints associated with formation process of meat character using pigs and chickens as experimental animals, discover the mechanisms of temporal £¨metabolism procedure£© and spacial £¨nutrient partition£© evolvement of organism nutrient metabolism based on the interaction of nutrition-gene-environment through adapting advanced technique, elucidate systematically the formation rule and its modulation of excellent meat character. The study of this project can establish stable and theoretical foundation for developing high quality stockbreeding and provide references for human nutrition and health protection.
